Mango, Haloumi and Quinoa Salad
Mango, haloumi and quinoa, yes please!
This salad is as easy as it is delicious (very easy and VERY delicious), so get cooking!
What you need:
2/3 cup uncooked quinoa
1 packed (180g) haloumi, cut into 1cm pieces
1 small head of cos lettuce, rinsed and thinly sliced
2 medium cucumber, cubed
2 small-med mangoes, cubed
2 tablespoons extra virgin olive oil
3-4 tablespoons balsamic vinegar
dash of soy sauce or sprinkle of salt in the dressing
What you do:
Rinse quinoa using a siv and running water. Place quinoa in a medium pan and add 2 cups of water. Bring to the boil, then reduce the heat to medium and cook for 10-15 minutes or until the grains are tender. Remove from heat and cool.
Heat a frypan over medium heat. When the pan is warm add the haloumi, cook for 1-2 minutes each side or until lightly browned.
Add lettuce, cucumber, mango, cooled quinoa and haloumi to a salad bowl and mix to combine.
Add the vinegar, oil and soy to a small jar and shake to combine.
Add a little extra protein if needed - tinned fish, boiled eggs, grilled meat or tofu.
Serve, dress with dressing and enjoy!
