Sweet Chili Ginger Beef Noodle Bowls
This is a super easy, cheap and healthy meal, perfect for the whole family!
What you need: (serves 4)
500g beef strips
2 T sweet chili sauce
2 T soy sauce
about 1 T grated ginger
1/2 leek, thinly sliced
250g packet bean thread vermicelli
2 carrots, grated
2 cucumbers, cut into matchsticks
1/4 red cabbage, thinly sliced
2 T vinegar of choice
2 T extra virgin olive oil
What you do:
Marinade beef strips in 1 T sweet chili, 1 T soy sauce, and 1 T grated ginger overnight or at least for an hour or two.
Heat a wok over medium heat, add 1 T olive oil and the finely sliced leek. Cook for 3-4 minutes then add the beef and the marinade. Cook for around 10 minutes or until the leek has caramelised and the beef is tender.
Prepare the bean thread vermicelli as per the packet instructions (I just cover them in boiling water for a few minutes then drain and they are good to go).
Make a dressing by adding the following to a glass jar, then shaking to combine 2 T olive oil, 2 T vinegar (I just used balsamic because that’s what I had), 1 T soy sauce and 1 T sweet chili sauce.
Add Noodles, veggies and the beef to a bowl and drizzle with dressing. Enjoy!
