Tasty Tuna & Veggie Pasta (low FODMAP)
This is a super quick and easy meal, using mostly common pantry staples, that is super tasty and satisfying. If you’re not a fan of canned foods this isn’t for you, but if you want a delicious and healthy meal at the end of a long day, this is the perfect recipe for you.
This recipe is also low FODMAP if gluten free pasta is used.
Serves: ~ 4
What you need:
1 packet pasta of choice (gluten free if low FODMAP)
1 tablespoon olive oil
1 tablespoon garlic infused olive oil
1 carrot, grated
1 zucchini, grated
2-3 cups finely sliced spinach
2 tins of diced tomatoes
1 tin of brown lentils, drained and rinsed
1 large tin of tuna
1 tablespoon of sugar
a pinch of salt
2 teaspoons mixed herbs
Grated cheese, to serve
What you do:
Heat a large saucepan, and both types of oil.
When hot, add the grated carrot and zucchini. Add the tins of tomatoes, the drained and rinsed lentils and the sugar, salt and herbs.
Let simmer for a few minutes (or you can add everything at the same time) then add the spinach and tuna.
Simmer for 5-10 minutes. At the same time, put on a large pan of water and cook the pasta as per the packet instructions.
When the pasta is cooked, serve it with the sauce and a generous sprinkle of cheese. Enjoy!
