Tahini, Yoghurt and Chipotle Dressing
Summer is salad weather, and with any delicious salad there is a tasty, tangy dressing. A salad dressing is an essential ingredient for me in having a really delicious salad, it helps make salads taste amazing and keeps me wanting to eat salads day after day. The healthy fats in the olive oil and tahini also helps our bodies to better absorb the fat-soluble vitamins in the veggies. Really, having a delicious dressing for your salad at lunch or dinner is a win-win.
I love experimenting with different combinations, and recently bought a big container of tahini, and have been making different tahini dressings to use it up. This one is a major win. It's delicious with all different types of salads, including the kale slaw in the picture (shredded kale, red cabbage and dill), and I'm sure it would be great in other salads too, and on wraps or burgers.
What you need:
2 tablespoons tahini
3 tablespoons olive oil
Juice from 1 lemon
6 tablespoons of white wine vinegar
2 tablespoons maple syrup
3 teaspoons wholegrain mustard
3 heaped tablespoons greek yoghurt
1 teaspoon salt
1 teaspoon chipotle powder
What you do:
Mix all ingredients together in a bowl, using a fork or whisk. When creamy serve with your favourite salad or store in a jar for later use.
