Muesli Cookies

These muesli cookies (biscuits) are filled with the good stuff - they contain healthy fats from the seeds, nuts and olive oil; protein from the eggs, nuts and nut butter; low GI carbs from the oats; and fibre from the oats, nuts, seeds and dried fruit. These are a good snack to have on hand for kids to have as an afternoon snack, and are perfect with a cup of tea. I have been making these biscuits for the last few weeks and they're great for when I'm hungry for a snack but don't feel like a piece of fruit. Perhaps, like a muesli bar replacement. 

What you need: 

1.5 cups rolled oats 

0.5 cup almonds

0.5 cup sesame seeds 

2 T brown sugar 

2 T shredded coconut 

1/3 cup sultanas 

2 eggs 

1/4 cup olive oil

2 T natural peanut butter 

What you do: 

1. Preheat the oven to 160°C. 

2. Blend the almonds and sesame seeds until they are a powder, add to a medium mixing bowl and then add the rest of the dry ingredients, except sultanas. 

3. Mix in the eggs, olive oil and peanut butter, then mix in the sultanas. 

4. Spoon the mixture on to an oven tray lined with baking paper (should make around 12 biscuits). 

5. Bake for 20 - 25 minutes or until  Let cool on a cooling rack and enjoy.
