Mixed Roast Vegetables
Roast vegetables is such a great dish to master, because if they are done right they are amazing, not to mention super easy, cheap and healthy. This recipe is just that. This is also the perfect dish for meal prep on the weekend, then pair it with protein for super easy weekday lunches.
Serves 5-6
What you need:
2 sweet potatoes, cubed
1/4 Kent pumpkin, cubed
2 carrots, cubed
3 zucchini, cubed
1 red capsicum, cubed
2 tomatoes, cubed
3 tablespoons extra virgin olive oil
2 tablespoons mixed Italian herbs
What you do:
1. Preheat oven to 180c.
2. Place the chopped vegetables in a large bowl and coat with the oil, vinegar and herbs.
3. Line a baking tray with baking paper, and then spread the vegetables evenly on to the tray. Roast for 60-70 minutes or until carrots are soft.
4. Enjoy with your choice of protein (and salad) for a delicious and healthy lunch or dinner.
