Greek-Style Salad

This is an absolutely delicious salad, perfect with grilled meat for a light summer meal. The roasted tomatoes add a really rich flavour, while the cucumber lighten things up. This is probably a better weekend or special occasion salad, due to the 30-40mins required to roast the tomatoes. I will be making this for Christmas lunch this year, and adding olives. Give it a try!  

What you need: 

3 punnet cherry tomatoes

2 medium cucumbers 

100g Feta 

Small handful basil leaves 

Equal parts olive oil and balsamic for dressing 

1 tablespoon extra olive oil, salt and pepper for roasting tomatoes  

What you do: 

1. Preheat the oven to 160 degrees celcius. Cut the tomatoes in half and place in a baking dish. Drizzle with olive oil and add salt and pepper to season.

2. Place baking dish of tomatoes in the oven for 30 - 40 minutes or until nice and caramelised. 

Roast tomatoes fresh out of the oven. 

3. Leave the tomatoes to cool (they need to be completely cooled before you add them to the cucumbers). 

4. Cut up the cucumbers in to cubes and place in your salad bowl, add the tomatoes to the bowl. Crumb the feta on top, then tear the basil and add it to the bowl. Dress with olive oil and balsamic vinegar and serve!
